Holi special - Malpuas (East India)

Ingredients:

-1 cup all-purpose flour
-1/2 teaspoon baking soda
-1/2 teaspoon cardamom powder
-1/4 teaspoon saffron strands
-1/4 teaspoon fennel powder
-1/4 teaspoon ground nutmeg
-1 cup sugar
-3/4 cup water
-2 tablespoons ghee (clarified butter)
-Oil, for frying

Instructions:

1. In a medium bowl, sift together the flour, baking soda, cardamom powder, saffron strands, fennel powder, and nutmeg.

2. In a separate bowl, mix together the sugar and water until the sugar is dissolved.

3. In a large saucepan, heat the ghee over medium heat. When the ghee is melted, add the sugar-water mixture and stir until it comes to a boil.

4. Slowly add the flour mixture and stir continuously until the mixture forms a thick paste.

5. Remove the pan from the heat and let the mixture cool to room temperature.

6. Once cooled, shape the mixture into small round balls.

7. Heat oil in a deep-fryer or large pot over medium-high heat. Gently drop the malpuas into the hot oil, frying until golden brown and crisp.

8. Transfer the malpuas to a paper towel-lined plate and let cool.

9. Serve with honey or syrup. Enjoy!
